Edit: Since people are apparently taking issue with this comment. It really not that tough to control your horse. Wherever you point your left thumbstick, without touching A/X, the horse will begin to move. Tap A/X a couple of times to trot and if that all you want then stop doing it and use the left joystick to continue riding, tap it a couple more times to go a bit faster, and so on. The only issue I can see is if you want to gallop at full speed and look around at the same time because you have to tap A/X to keep the full speed gallop up, but even if you stop tapping the horse will continue at a good clip while you look around. If you need to stop short try pulling back on the left joystick while holding R1/RB which will get the horse stopping and turn it at the same time so you won collide with something and should stop more quickly.
